The goatherd ancestors of the Sierra made delicious and exquisite cheeses. Monte Robledo has rescued this recipe of ancestral tradition for the tasting and recognition of the Sierra de Aracena y Picos de Aroche, not only for its hams and sausages, but also for its cheeses. Monte Robledo cheeses have acquired great prestige, being offered by gastronomic companies of very select clientele in Andalusia, Madrid, Valencia, the Basque Country, Catalonia and also being marketed in France, Italy and the United States. The cheeses are made with raw milk and are cured naturally, that is to say, we respect the flora that naturally grows on the cheese, and it is this flora that gives the characteristic flavour of our cheeses, with a penetrating smell and taste (cured cheeses).
